D.O. Cava: commitment to origin, land and sustainability

The D.O. Cava designation of origin includes quality sparkling wines made using the traditional method in different delimited areas of Spain. Cava is a unique wine, thanks to years of history and tradition, as well as its production process, offering various categories depending on the aging in the bottle and dosage.

Aging months define these categories, from Cava de Guarda (+9 months) to Cava de Guarda Superior, which will be 100% organic in 2025: Reserva (+18 months), Gran Reserva (30 months) and Cavas de Paraje Calificado (+36 months).

Ranking at 70% of international sales, Cava is the Spanish Designation of Origin exporting the most sparkling wine with a protected quality seal and guarantee. The designation has over 38,000 hectares of vineyards and more than 6,000 winegrowers, and its 350 associated wineries are present in more than 100 countries.

Under this seal, Cava and its genuine characteristics are protected and distinguished both nationally and internationally. All Cava production is monitored and controlled so that producers and processors maintain their commitment to product quality at the highest possible level.

The history of Cava tells of the efforts, ingenuity and creativity of a group of winegrowers in the mid-19th century, who, after facing the challenge of the phylloxera plague, discovered what is today recognized for its rigorous elaboration, quality and international fame.

It all began in a small place with a long winemaking tradition, Sant Sadurní d’Anoia, with three native white grapes as protagonists: Macabeo, Xarel·lo and Parellada. These three varieties differentiated the sparkling wine that we know today as Cava, a delight at any time in our lives, and as the perfect accompaniment to any dish in the world.

The Cava Regulatory Board is a public corporation comprising winegrowers, producers and representatives of the autonomous communities of the Cava Region and the Spanish Ministry of Agriculture, Fisheries and Food.

The Board has the mission of ensuring and guaranteeing the quality of Cava and its compliance with regulatory specifications, certifying origin, the traditional production method and the analytical and organoleptic characteristics to ensure the quality of all wines marketed under the Cava seal.
